Ingredients:

  • red/kidney beans, 2 cans or 1.5 cups dried
  • olive oil
  • onion, 2, large
  • green bell peppers, 2
  • celery stalks, 2, large
  • garlic, 3 cloves
  • tempeh, 15 oz
  • salt
  • pepper
  • cayenne
  • cajun seasoning
  • thyme
  • bay leaves, 2
  • vegetable broth

Steps:

  1. heat oil in large pot
  2. add onion, green bell pepper, celery; cook 7 minutes
  3. add tempeh; cook 5 minutes
  4. add garlic, seasonings; cook 1 minute
  5. add beans, vegetable broth + enough water to cover beans
  6. bring pot to a boil, reduce to a simmer until beans are cooked and mixture thickens

Yields 8 servings.

Serve over rice.
