Cajun Red Beans
Ingredients:
- red/kidney beans, 2 cans or 1.5 cups dried
- olive oil
- onion, 2, large
- green bell peppers, 2
- celery stalks, 2, large
- garlic, 3 cloves
- tempeh, 15 oz
- salt
- pepper
- cayenne
- cajun seasoning
- thyme
- bay leaves, 2
- vegetable broth
Steps:
- heat oil in large pot
- add onion, green bell pepper, celery; cook 7 minutes
- add tempeh; cook 5 minutes
- add garlic, seasonings; cook 1 minute
- add beans, vegetable broth + enough water to cover beans
- bring pot to a boil, reduce to a simmer until beans are cooked and mixture thickens
Yields 8 servings.
Serve over rice.
