Ingredients:

  • olive oil
  • garlic, 4 cloves, minced
  • ginger, grated, 1 TBSP
  • sweet potato, cubed, ~1 lb
  • onion, 1 medium, diced
  • cumin
  • crushed red pepper
  • tomato paste, 6 oz
  • natural peanut butter, 1/2 cup
  • vegetable broth
  • collard greens or kale or spinach, chopped, 1/2 bunch
  • salt, to taste

Steps:

  1. saute onion, garlic, and ginger until onion is translucent, ~3 minutes
  2. add sweet potato, cumin, and red pepper, saute 5 minutes
  3. add tomato paste, peanut butter, and broth, stir until peanut butter and tomato paste are dissolved
  4. boil 20 minutes
  5. stir in the greens, let simmer 5 more minutes
  6. smash some sweet potatoes against the side of the pot to thicken the stew

Yields 6 servings.

Serve over brown rice. Top with cilantro and chopped peanuts
